Mini Apple Pie Bites

It is no secret to my friends and family that I am thoroughly addicted to Pinterest.  There is no shame in it!  In fact, I must credit Pinterest with inspiring my desire to cook.  You see, I don't really like to cook (but I can cook!) - but lately, seeing all of the yummy things on there really got me inspired to start cooking/baking a little more.

Through my church, I attend a small group of young adults every Tuesday and we always bring something to eat during group. This is the perfect setting for me to test all of my good eats that I find on Pinterest.  A big thanks to my group for letting use them as guinea pigs.

Last night's creation was inspired by a recipe that I found (via Pinterest) at Budget Savvy Diva. I modified the recipe slightly because I used my own dough recipe.  You can buy pre-made dough from the grocery store or you can make your own.  I also doubled the recipe since I needed much more than 24 of these for my group.

Mini Apple Pie Bites

What You Need

1/2 cup sugar
2 teaspoons ground cinnamon
1 package refrigerated pie pastry or make your own pie dough
2 tablespoons butter, melted
2 medium tart apples – peeled – cut between 16 - 24 wedge slices (I managed 12 slices per apple)

What To Do

  1. Combine sugar and cinnamon mixture
  2. Set Aside a 1 Tablespoon of the mixture for mixing with the apples
  3. Unroll store bought pastry dough or roll out your own pie dough and brush on 1 Tablespoon of Butter and sprinkle sugar mixture.
  4. Place Apple Slices into a gallon ziplok bag and put in the rest of the sugar mixture – and shake and mix cinnamon/sugar with the apples.
  5. Cut the pastry into strips — about 1 inch wide and 5 inches long.
  6. Wrap one strip around each apple wedge, placing sugared side of pastry against the apple.
  7. Place “pies” on parchment paper lined baking sheet. Brush on the remaining butter and sprinkle with the rest of the sugar mixture on top of each "pie".
  8. Bake at 425 for 10 – 13 minutes or till golden brown.

Note: you can serve with whipped cream (which is amazing!).  Also, the mini apple pie bites are really good cold - so don't worry about heating it up.

And what good is a photography blog without pictures?  I didn't record every step, but close enough.  And, by the way...I LOVE my new iphone.  Makes taking pictures like this so much easier than grabbing my big camera.

Start with some nice juicy Granny Smith Apples

Cut and peel the apple into wedge slices - I was able to make 12 wedge slices per apple.

Roll out pie dough, brush on melted butter and cover in cinnamon/sugar mix. After that, cut strips of dough - about 1 in wide and 5 in long

 

Rollup the apple slice in the dough with the sugar mixture against the apple. Once on the cookie sheet, brush on more melted butter and sprinkle more sugar mixture on top and place it in the oven.

 

10-13 minutes later (at 425 degree oven) you got these amazing little bites! Hope you enjoy them!!
